Rachel Khoo's Harissa Minestrone Soup

Rachel Khoo shares her twist on the classic minestrone soup with a spot of harissa, lentils and delicious chorizo sausage!

Harissa minestrone soup

Serves 4-6

Preparation time 15 minutes
Cooking time 20 minutes

Ingredients

1 chorizo sausage, sliced*
1 large red onion, peeled and finely chopped
4 carrots, peeled and finely chopped
100g lentils (I use beluga or puy)
2 heaped tbsp harissa paste
1 clove of garlic, peeled and thinly sliced
1 tin cherry tomatoes
0,75l chicken or vegetable stock
150g frozen peas

Method

Throw the sliced chorizo sausage, onion and garlic into a large pot.
Fry until soft before adding carrots and harissa paste. Followed by the lentils.
Pour in the cherry tomatoes and chicken stock. Bring the heat up so the soup is simmering.
Cover for 12 minutes.
Add the peas and cook for another 2 minutes
Taste for seasoning before serving.

*For a vegetarian version, replace the chorizo with 1 tbsp olive oil. Serve the soup with the dollop of sour cream.
