Rachel Khoo's Spiced Duck with Plum Sauce
Rachel Khoo shares a delicious winter meal - a blend of warm and toasty spices, a hunk of butter, spread over a beautifully rich duck. Super tasty and satisfying!
Crispy Spicy Duck Legs with Plum Sauce
Preparation time: 30 minutes
Cooking time: 2 hours
Ingredients:
2 duck legs
Salt
1 tsp ground cumin
1 tsp ground ginger
1 tsp white pepper
½ tsp ground cinnamon
2 knobs of soft butter
6 plums, ripe and destoned
4 tbsp plum conserve
Serve with steamed greens and smashed new potatoes.
Method:
1. Preheat the oven to 160c.
2. Place the plum halves with the plum conserve into a baking dish or tray.
3. Mix together the soft butter with spices and salt.
4. Rub the spice paste on the ducks until well coated. Place skin side down and cover with aluminium foil. Cook for 1 hour 30 minutes.
5. Occasionally baste the duck legs with the juices from the pan.
6. Remove from the oven and take off the aluminium foil.
7. Turn the oven up to 200c.
8. Turn the legs over and baste again. Roast for a further 30 minutes. If the legs brown too quickly, turn the heat down or remove from the oven.
9. Plate the greens, potatoes, place a leg on top and pour over the sauce. If you prefer a smooth sauce you can blend the plums.
