How to Make Hanukkah Latkes

What You Need:

4 small russet potatoes
1/4 red onion
1/2 tsp salt
1/2 tsp pepper
1 TBL thyme, chopped
3 TBL cornstarch
1 egg
Canola oil or schmaltz for frying
Sour cream + apricot jam for serving

1. Using a box grater shred all potatoes and onion into a large bowl. Squeeze the mess getting as much liquid out as you can. Place the dry potatoes and onion in a clean bowl.

2. Season the mass with salt, pepper and thyme. Stir in cornstarch and egg.

3. In a large non-stick skillet pour enough oil to cover the bottom of the pan. You can use oil or schmaltz or a combination of the two.

4. Once it shimmers add 1/4 cup of potatoes into the hot oil. Press down with a spatula until a small pancake forms. Fry on medium heat until golden, a few minutes.

5. Carefully flip and fry once more. Place latkes on drying rack and stash in a warm oven while you finish the rest.

6. Serve with sour cream and applesauce (or apricot jam) and garnish with parsley.
