Cranberry Hazelnut Stuffing:

What You Need:

3 TBL butter
1 red onion, minced
4 celery stalks, minced
1 TBL rubbed sage
2 tsp dried thyme
6 cups French bread, cubed
1/2 cup hazelnuts, chopped
1/2 cup dried cranberries, chopped
2 tsp salt
1 tsp pepper
1 egg
1/3 cup veggie broth
1/3 cup evaporated milk

Combine veggie broth, evaporated milk and egg.

Set aside. Melt butter in a large non-stick pan. Add onions, celery, herbs, salt and pepper. Cook until caramelized, about 10 minutes. Add hazelnuts and cranberries.

Place bread in a large bowl. Add sautéed veggies and liquids. Spray a few gratin dishes with no stick spray. Add stuffing mix.

Bake dishes at 350 degrees for 15-20 mins or until lightly golden. Serve hot or at room temp.

Cranberry Sauce:

What You Need:

1/2 lb. frozen cranberries
Juice of 1 lemon
3 cups ginger ale
1 TBL honey
1/4 brown sugar
1/4 tsp salt

Place all ingredients into a saucepan. Bring to a boil. Drop to a simmer and cook for 30 mins on low or until berries cook down.

Place in a blender and blitz until smooth. Pass through a strainer in whatever serving dish you like. Serve with a ladle over turkey or other sides.

Glazed Yams:
3 yams
3 TBL butter
1/2 cup brown sugar
1/2 cup cola
1/2 tsp brown sugar
1/2 tsp cinnamon
Pinch of Salt
In a large non-stick pan, melt butter. Add yams and cook a few minutes, tossing as you cook. Once butter becomes orange, add cola, brown sugar, salt and cinnamon.

Cook on medium heat for 20 minutes or until your yams are easily pierced with a knife. Cook on medium high heat until liquids reduce to a thick sauce. Careful, it will get hot!

Once sauce reaches desired consistency, place on a warm plate. Eat immediately.

Blueberry Tart:

1 sheet of puff pastry
12 oz frozen blueberries
Juice and zest of one lemon
2 TBL butter
1/3 cup sugar
1/2 tsp vanilla
1/2 cup cake crumbs
1 egg beaten w/ 1 TBL milk
1 1/2 cornstarch

In a large non-stick pan, combine blueberries, lemon juice and zest, sugar, cornstarch and vanilla. Cook until thickened and reduced, about 10 minutes. Add a pat of butter and turn off the heat. Place in a bowl and allow to thicken and cool in the fridge for two hours.

Place a thawed sheet of puff pastry on a parchment lined sheet. Sprinkle cake crumbs in the center of the pastry. Pour on blueberries. Fold over the edges over themselves to make a freeform tart. Brush the top with a beaten egg mixed with a little water.

Bake in a 425 degree oven for 15-20 minutes or until top is golden and puffed up. Allow to cool at least half an hour before slicing. Serve alone or with a little ice cream.
