How to Smoke Lamb Ribs and Make Chimichurri

The trimming is SO important, get it wrong and you'll never want to eat lamb ribs again! However, get it right and they'll become a regular meal!

As stated in the video, the recipes used in this video are below...

RUB RECIPE:

- 1 tsp salt
- 2 tsp cracked black pepper
- 1 tsp onion powder
- 1 tsp garlic granules
- 1 tsp mixed herbs or rosemary
- 1/2 tsp brown sugar

CHIMMICHURRI RECIPE

- 1/2 cup of olive oil
- 1/2 red chilli, seeded and finely diced
- 4 gloves of finely diced or minced garlic
- 1/2 cup of parsley, finely chopped
- 3 TBS of red wine vinegar
- Zest of half a lemon
- Juice of half a lemon
- Salt & pepper to taste

METHOD - Combine all ingredients apart from the olive oil and salt & pepper in a bowl. Stir and slowly add the olive oil, you can use more than 1/2 a cup if you want a runnier consistency. Add your salt & pepper to taste. You can also use some finely chopped mint in there too.
