Table sugar is sucrose, which has the chemical formula C12H22O11 and it is a carbohydrate. The other ingredient, Sulfuric acid, is a strong acid and a powerful dehydrating agent. When you mix the two, the sulfuric acid will dehydrate the sugar and actually pull water from the sucrose leaving solid carbon. After the reaction we are left with H2O and carbon the element. The head generates steam which makes the carbon rise into a solid, spongy tower.

Don't try this at home, sulfuric acid will burn skin permanently, not something you want to mess with.
