How to Roast a Chicken (In the Oven)

How to roast a chicken, you ask? I got you. Crispy skin, succulent meat… what’s not to love. In this video we’ll go over a simple way (one of many) to make the juiciest whole roasted chicken with the crispiest of crackly skin.

You can Spatchcock a bird (cut the backbone out and spread it flat,) you can smoke a bird, you can butcher a bird up and cook the pieces separately, you can sous vide a bird... today we're keeping it classic and oven roasting a bird.

COMPOUND BUTTER #1
2 cloves garlic, minced
4 tbsp butter, room temperature
1/ 4 cup Parsley, finely chopped
Kosher Salt

COMPOUND BUTTER #2
1 clove garlic, minced
Half inch knob ginger, minced
1/ 4 cup Cilantro, finely chopped
Zest of half a lime
Zest of half an orange
Kosher Salt

CHICKEN ROASTING DIRECTIONS:
Roast at 425F for 20-25 mins, or until a nice golden skin begins to form.
Lower the heat to 375F to finish cooking. 35-50 minutes, or until the thigh reads a temp of 160F.

5% BRINE...
Water Weight x (.05 Salt Weight) = 5% Salt Brine
*brine for 24 hours
**makes chicken breast more tender and moist. Optional.

TEMP CONVERSIONS...
425F = 218c
375F = 190c
160F = 71c
