GUT-FRIENDLY MEAL in under 10 minutes | Roasted Cauliflower Dish | Lectin-Free | Gluten-Free Recipe
Main Ingredients:
1 head of Cauliflower
1 half of sweet onion
1 bunch of leeks
1 bundle of green onions
Wild Caught Shrimp
Olive Oil
Avocado Oil
Seasonings: paprika, onion powder, garlic powder, cayenne pepper, salt and pepper
Directions:
- Toss the cauliflower in a big mixing bowl and add in your seasoning so first will start with olive oil and toss that around really good to coat every piece
- Add seasonings: paprika, onion powder, garlic powder, cayenne pepper, salt and pepper
- Roast in oven for 30-35 minutes on 425°
- Chop onions, leeks and green onions
- Sauté leeks in pan with an inch of water on medium-high heat for 5-10 minutes until all water has evaporated. Season with salt and pepper.
- Sauté shrimp in pan with onions (add a tbsp of avocado oil, if not using frozen). Cook for about 5-7 minutes. Be sure to not over-cook the shrimp!
- PLATE and ENJOY :)
