Making a dough cutter/scraper

I show how to make a dough cutter or scraper. A handy kitchen utensil - especially when baking "Lussekatter" aka Saint Lucia saffron buns, a holiday season necessity here in Sweden :)

The recipe for lussekatter:

100 g fresh yeast (we use a special kind for sweet doughs, doesn't matter I think)
400 g butter
1 liter milk
4 dl sugar
1 tea spoon salt
2 g saffron
~1 tea spoon cardamom
~2 kg wheat flour (add to good consistency)

1 egg and raisins added before baking

Melt the butter and add milk to a temperature of 37C. Mix all ingredients and add flour to a good consistency (the dough should not stick to your fingers when touched). Let the dough rise for about 1h. Knead and do the buns, add raisins and let them rise for another 30-40 min. Brush with egg and bake at about 225C for 5-7 min.
