{Balsamic Caviar} - basic spherification - How to Cook

Todays cooking lesson: we are learning a basic spherification of Balsamic vinegar with the use of agar agar, remember this works with most liquids so experiment with other things. balsamic caviar can be used to give a salad a twist, served with soups or just used to add some acidity to your favourite dishes.

Recipe:

metric
100ml balsamic vinegar
1.5g Agar Agar
300ml vegetable oil (can be kept and reused)

cups
⅓ cup plus 1 tbsp balsamic vinegar
1½ grams Agar Agar (sorry, you really need to weigh this, its about a 1/4 tsp)
1¼ cups vegetable oil
