A very warm welcome back to What’s For Tea :) Today I made this absolutely gorgeous & very comforting creamy chicken pasta bake! Highly recommend you try this one folks…it truly is amazing! This will feed 5-6 people, if you’re only feeding 3-4, just half the ingredients :)

What you’ll need (serves 5-6)

1 Large onion - finely diced
2 Large chicken breasts - diced or chopped into bite size chunks
2 Bell peppers - diced
6 or 7 Mushrooms - diced
1 Tablespoon tomato puree
2-3 Cloves garlic - chopped
A splash of olive oil for frying
500g (17.6oz) Penne pasta
A few good handfuls of grated cheddar cheese
1-2 Balls fresh mozzarella
1 Teaspoon cumin (seeds or ground)
1 Teaspoon paprika (I used smoked)
1 Chicken OXO cube (or chicken bullion powder)
1 Teaspoon oregano
Handful of parsley
Salt & pepper (to taste)

Bechamel Sauce:
1 Litre milk
100g (3.5oz) Flour
100g (3.5oz) Butter
Salt, pepper
1/2 Teaspoon nutmeg
