When you pick up a plant, the game will teleport the last vehicle you used somewhere nearby, usually you can see it right away, but if not, check the nearby road.

This also works with helicopters and I highly recommend you use one.

All of the plants can be reached with a helicopter, most of them with just a car too, only the last one requires you to either dive straight at the plant or use a scuba tank (you can get it by exiting a Dinghy or a submarine.

Peyote 27 is the hardest of all locations to find, you will find it in the location marked on the map, right under a bunch of seaweed.

Collecting all peyote plants will get you a couple achievements. That's pretty much the only reward you get for collecting them aside from animals in director mode.
