Hot Cross Buns - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making Hot Cross Buns, SEE RECIPE BELOW!
Ingredients for dough:
3 Cups, flour
1/3 Cup, sugar
1/4 Cup, butter or margarine
2 Tsp, fast rising or traditional yeast
3/4 Cup, warmed evaporated milk 
1/4 Cup, warm water for yeast
1 Tbsp, allspice (cinnamon,cloves,nutmeg,ginger)
1 Cup, mixed dried fruit
2 Large, eggs
1/2 Tsp, sea salt

Ingredients for crosses and glaze:
4 Tbsp Flour
3 Tbsp Water
1 Plastic Bag
1 Brush

1 Tbsp, Honey for glazing buns after baked

Prep Time: 15, Rising time: 20 to 30 minutes x 2 , Pre-heat oven: 350ºF, Baking time: 20- 25 min,

Method for dough:
In a large bowl add 2 cups flour, sugar leaving 1 tsp to add with yeast, salt, allspice, dried fruit mix together.
Then add yeast in 1/4 cup warm water and 1 tsp sugar, let rise for 5 minutes.
Mix eggs together in a small bowl then pour in dry ingredients.
After warm butter and milk add to dry ingredients, then add yeast mix together with wooden spoon or kitchen aid.
Next when dough starts to come together, you can use your hand to continue mixing and kneading, use the extra 1 cup of flour to form dough into a ball.
When dough is formed into a ball, cover and set aside in a warm place for 20-30 minutes to rise, only one rise on dough.
While waiting for dough make the paste for the crosses on your buns, in a small bowl mix together flour and water, sit aside until ready for it.
Back to the dough, cut dough into 12 small pieces, then roll each piece by hand outwards and under the same as bread dough balls, then place in a 9 x 9 baking pan.
Then cut a cross on the top of each bun and in a plastic bag add your past, cut a little hole in the tip of plastic bag.
Then draw a cross over each bun with flour paste.
After put your buns in a warm area to rise for 20-30 minutes, when ready bake in a 350ºF oven for 20-25 minutes or depending on your oven.
When baked remove from oven glaze with honey using a brush. Enjoy with butter or jam,

Baking Tips:
After hot cross buns are cooled down put in a container with lid or plastic bag to keep soft, or freeze some to keep fresh longer.
Having all ingredients measured and ready to work with.

These delicious hot cross buns were known as Easter buns in Newfoundland and we would have these little buns all Easter long but mostly on Easter Monday when we would have our Easter egg hunt and party.
