AMAZING Minestrone 🍲 Soup Season Is Here 🍂

There is nothing like a warm bowl of this veggie packed Minestrone soup to bring up the vibes on a chilly fall or winter day! I show you how to make it from scratch so you too can feel the love of this soup.

Recipe:
1/2 cup chopped onion (about 1/2 an onion)
1 cup chopped carrot
1 cup chopped celery
2 cloves of garlic
1 tsp fennel
1 tsp cumin
1 tsp savory
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp oregano
2 liters (about 8.5 cups) of vegetable broth (Used in video: Better Than Bouillon)
1 large can of crushed tomatoes (28 fl oz. (800 ml))
2 cups pulse pasta
1 cup of sliced brussel sprouts
1 can of white beans

Directions: Prepare vegetables. Sauté for 10 minutes. Add a few tablespoons of crushed tomato as needed to help sauté. Add the spices a few minutes before the vegetables are done sautéing. Once the veggies are soft add the remaining tomatoes and vegetable broth to the pot. Bring to a boil and simmer for 10-20 minutes. Add pulse pasta, brussel sprouts, and white beans after the soup has been boiling for 10-20 minutes. Cook for another 8 minutes or until pasta is done. Stir in 1 cup of frozen peas and remove from heat.
