INGREDIENTS
For the Patties
5 ounces ground beef (80/20)
Kosher salt and black pepper, to taste
Vegetable oil
4 slices American cheese
8 slices bacon

For Assembly
1 brioche bun
1 thick slice white onion
Mayonnaise
Ketchup
Kosher dill pickle chips

COOKING METHOD
For the Bacon
1. Preheat oven to 400. Line a sheet tray with parchment paper. Cut the bacon in half horizontally, then arrange in a circle. Top with another piece of parchment and then another sheet tray to add weight. Place in the oven and bake for 20 minutes, or until crispy.

For the Burgers
1. Divide the ground beef equally into 2 patties. Season with salt and pepper.
2. Preheat a large cast iron skillet or griddle over medium-high heat. Add vegetable oil, and once shimmering, add the patties.
3. Using a burger press, place on top of the burgers to create a thin, even patty. Cook for 2-3 minutes, or until deeply golden brown. Flip and repeat.
4. Remove the skillet from the heat and add 1 slice of cheese to each patty.

For Assembly
1. Add 1 bacon circle to the bottom of the bun, then top with patty. Top with another bacon circle, and then another patty.
2. Top with a final bacon circle. Add onion, pickled ketchup, and mayonnaise and the top bun.
