Pressure Canning Whitefish (How-to)

I teased this video a year ago, and with all credit to my buddy Ken Cudmore, finally got it done. He demonstrates how to vacuum-seal fish, which you can skip if you'd like to can them immediately, but it's usually not convenient to do the canning right when getting home from a trip with your catch.
If you try this, you'll see that pressure canning is an amazing way to preserve and prepare fish in general, along with deer meat and other types of wild game....the canned (jarred) meat lasts "forever" and doesn't need to be refrigerated, so it's an ideal real-food snack to take while fishing or hunting...or if you have some other lame hobby, too.
