Easy To Follow Mini Apple Pie

Ingredients
Part 1: Pie Crust
1 cup room temperature butter
2 ½ cups all-purpose flour
½ cup sugar
1 tsp salt
¼ cup ice water

Part 2: Filling
¼ cup freshly squeezed lemon juice
4 pcs of medium - large apples
⅔ cup sugar
¼ cup unsalted butter
½ tsp ground cinnamon
¼ tsp Nutmeg
Optional: 1 pinch ground nutmeg

Part 3: Assembling the Pie
1 egg
1 tbsp cream
3 tbsp sugar
1/2 tsp cinnamon

Instructions

Part 1: Pie Crust
Mix all the ingredients thoroughly. You can use your hands when the dough becomes hard enough
Transfer the dough to a cling wrap and place it in the fridge for 30 minutes to chill
Note that you need to create two batches of dough (one for the crust and the other one for the lattice)

Part 2: Filling
Squeeze half of the lemon to the finely sliced apple and add the sugar, give it a quick toss
In a large skillet, melt the butter and add the apples.
Add the cinnamon and let it cook (stirring occasionally) for 5 - 7 mins until the juices come out
Pour the apples into a strainer and pour the juice back into the pan
Add the cornstarch and stir the juice until it thickens
Add the reduced juice to the apple and let it cool completely

Part 3: Assembling your pie
Roll out your chilled dough to about ¼ inch thick
Use a cookie cutter (or any cutter) to cut the dough, making sure that it’ll fit to the molder of your choice
Carefully place the cut dough into the molder and pour the filling
Take out the second batch of dough you created, roll it out and cut it into strips
Make a lattice by carefully placing each strip over one another. You can lay one set of strips then fold every other strip over. Place a strip of dough perpendicular to the others next to the folded strips. Fold down the strips and repeat the process
Create your egg wash by combining egg, milk and cinnamon powder. Carefully brush each pie
Bake in 180C for 40 to 50 minutes until golden brown
Serve and enjoy!
