New York Style Artichoke Pizza Recipe

Artichoke topping recipe
Ingredients for 16 inch pizza
Heavy whipping cream - 1 cup
Ricotta cheese - 1 cup
Artichokes, sliced thin (about ¼ inch) - 1 cup for sauce and 1 cup for topping
Parmesan grated - 1 tablespoon and extra for finishing
Fine Sea Salt - 1 teaspoon
Mozzarella, whole milk dry, cut into 1 inch cubes
Fresh basil, cut into strips (“chiffonade”)
Lemon zest
Making the Sauce
Artichoke-cheese sauce: Combine the heavy cream, ricotta cheese, artichokes, Parmesan and sea salt, mix with an immersion blender until smooth and consistent
Topping the pizza
For a 16 oz pizza, use about 8 oz of sauce. Spread the artichoke-cheese sauce on top of the pizza, to about 1 finger width from the edge
Add mozzarella cubes spread evenly, but do not completely cover
Add slices of artichoke
Add a sprinkling of Parmesan cheese
Baking
Preheat the oven to 500 degrees
If possible, use the 2-stone method, leaving 6-8 inches between the two pizza stones or steels
Put the pizza on the bottom stone and bake at 500 degrees, approximately 10-12 minutes (depends on your oven and whether you are using pizza stones or steels, so check the bottom to see if it is browned.)
Half way through baking, rotate 90 degrees
Finishing
After removing pizza from oven, spread strips of fresh basil over the top and add some lemon zest (to taste)
