Funky Food Friday || Spam Fritters

On today's Funky Food Friday, it is actually both funky and foreign! In our awesome box of snacks from Scotland was a can of SPAM! That in it self is not so unusual here in the States, the unusual part comes in how Spam is served in the UK: battered and fried! Usually these would be served with a side of mashed potatoes or chips and mushy peas. Thank you Stacey and Stuart for sending us the can of Spam and suggesting fritters! Thank you Rachael Maynard for providing me with a recipe!
