There are at least seven critical points. If a product violates too many of these seven criteria, you should be very careful.

Bad reviews are really hard to deal with. You can not cover up bad reviews with good ones. The best strategy is not to carry products that can be potentially attracting bad reviews. Customers are hard to please.
Secondly, a product should ideally be easy to ship.
Some products are hard to ship. Shipping is extremely expensive these days. Most etsy shops use free shipping to attract customers - this is borderline insanity but everyone is doing it.
Thirdly, a product should have profit margin.
A product only makes money when the price minus the shipping cost and source cost is positive. However, the shipping cost is very high in 2021, and many shops engage in price competition to attract customers. You know, not every shop owner is doing this to make money. Some are just happy to lose money for a while, to have a business or something to do.
Fourth, a product should have variants.
A good product should have in-determinant variations. The best variants are color variants, design variants, and material variants. If you sell a hand held magnifier, there are only one or two different designs. If you sell dresses, clothing, or knitting patterns, it is very easy to have thousands of varieties based on similar work flow for you.
Fifth, a product should have reliable sourcing.
If the source disappears, your business disappears. It is very important to secure low cost sourcing. It may sound easy but it is a huge risk down the road, when you becomes big. It may be easy to drop ship some items from China for now, but once you grow big your source will behave differently.
Six, be careful with unique products.
A product should be in a main stream category. Don’t try to be unique. Make a niche in main stream.
If you make a unique product, people won’t be able to find it. Every customer is using the tiny window of a smart phone to shop - there are not much room for the shop platforms to display. If 10000 people sees your products, 100 might click it, and one may buy it. Your unique product will not defy the rule of conversion.
Seven, think about keyword engineering before you start.
Keyword engineering is otherwise known as SEO (search engine optimization). SEO is to tell the search engine how to tell web visitors about you. If your primary keyword is small, you will never grow big. For example, you may want to sell a paper weight with magnifier as a wedding gift. However, it may be difficult to rank under the keyword “magnifier”, and it may be too weak to rank under “wedding gifts”. In the end, your product will never be discovered. It does not matter how much money you spend marketing it, people just won’t find you.
This dress for example is a good product. It is easy to ship, and is made by the shop owner. It has thousands of design variations, and is unlikely to get bad reviews. People who does not like something just won’t buy it. The product is not unique - it is a piece of clothing. The potential customer base is very large.
