Onion & Egg Skillet Melt
To begin, pour a generous swirl of olive oil into a cold pan. Arrange 1½ thinly sliced red or white onions in a single layer across the bottom. Gently pour six whole eggs over the onions and season them with salt, pepper, and a pinch of dried oregano. Use a spatula to break the yolks and lightly mix the eggs into the onion rings. Scatter chopped pepperoni and sliced olives over the top for extra savory depth. Cover the pan and cook over medium heat until the eggs are set. Once firm, top the entire surface with a thick layer of shredded mozzarella and another sprinkle of oregano. Replace the lid for a few minutes until the cheese is perfectly melted and bubbly.
