TDD Lasagna
1.5 lbs ground beef
1 medium yellow onion, finely diced
6 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 can (15 oz) tomato sauce or diced tomatoes
2 tbsp tomato paste
1 tsp fennel seed
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes
1 tsp sugar
1 tsp salt + black pepper to taste
2 tbsp olive oil
1/4 cup red wine or beef broth

24 oz full-fat cottage cheese
1 egg
1/2 cup grated Parmesan
2 tsp dried Italian seasoning
1/2 tsp garlic powder
1/4 tsp black pepper
Good pinch of salt

12 lasagna noodles
8 oz shredded mozzarella
1/2 cup grated Parmesan

Heat olive oil in a Dutch oven over medium-high heat. Add the onion and cook 5 minutes until softened.
Add the ground beef. Let it sit and develop a dark brown sear on the bottom, about 3–4 minutes, before breaking it up. Season with salt and pepper.
Add the garlic, fennel seed, oregano, basil, and red pepper flakes. Cook 2 minutes, stirring constantly, until fragrant.
Add tomato paste. Stir it into the meat and cook 2 more minutes.
Pour in the wine or broth and scrape up everything from the bottom of the pot. Add the crushed tomatoes and tomato sauce. Stir in the sugar.
Bring to a simmer, then reduce heat to low. Cook uncovered for 20–25 minutes, stirring occasionally.

Combine cottage cheese, egg, Parmesan, Italian seasoning, garlic powder, salt, and pepper in a bowl. Mix thoroughly.

Boil noodles in heavily salted water 1–2 minutes less than the package directions.

Preheat oven to 375 degrees F. Lightly grease a 9x13 inch baking dish.
Layer: Noodles (overlapping), then half the cottage cheese mixture spread evenly, then a generous layer of meat sauce.
Layer 2: Noodles, the remaining cottage cheese, meat sauce, and a handful of mozzarella in the middle for extra richness.
Layer 3: Noodles, remaining meat sauce spread to the edges.
Top: Cover completely with all remaining mozzarella and the Parmesan.

Cover tightly with foil. Bake at 375 degrees F for 40 minutes.
Bake an additional 15 minutes uncovered
Let it rest for 15 minutes before cutting.
