How to Make Sourdough Pancakes, Two Ways

One of my favorite things about weekends are making (and eating!) my sourdough pancakes. They are fluffy and delicious, perfectly complimented with just a drizzle of maple syrup (okay--and some butter), but best of all: YOU'LL USE UP YOUR DISCARD STARTER! No more feeling guilty for getting throw it out when you feed your starter to make delicious loaves; you won't be throwing it away at all, you'll use it to create something else worth bragging about on Instagram ;)

I need to hat-tip to online resources that were pivotal in how I developed these recipes. For the sweet pancakes, I came up with this recipe (ingredients list & measurements below) based on the article by Sarah Jampel on Food52 that pin-pointed the basic formula for excellent pancake batter: 1 cup flour : 1 egg : 1 cup milk. I tinkered with my ingredients based on that theory and came up with my go-to recipe that I use in my kitchen. His formulas are some of the most trusty resources for sourdough baking, and he has a recipe for sourdough pancakes, which first turned me onto the idea way back in the day. Here's what you need to make these sweet breakfast sourdough pancakes:

1 ¼ cup (150 grams) all-purpose (plain) flour
1/2 cup (122 grams) whole milk
¼ cup (60 grams) plain Greek yogurt
¼ cup (50 grams) granulated sugar
1/2 cup (105 grams) sourdough starter

FRIDGE OVERNIGHT (optional) with the above ingredients; then the following day add:

2 tbsp (42 grams) melted butter
1 tsp baking powder
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
2 eggs, separated
