Try this traditional Lunar New Year dessert! Eight Treasure Sticky Rice (八宝饭)

To ring in the lunar new year, I present to you one of the most traditional must-haves during the spring festival – the eight-treasure sticky rice! I created a mini version with purple rice and decorated it with some super easy-to-make red date flowers. Whether you celebrate the holiday or not, if you like glutinous rice dishes or are looking for a way to use up some pantry staples, you won’t want to pass this one up!

1 tbsp coconut oil
25 g (1/4 cup) dried Chinese red dates, pitted and diced
25 g (1/4 cup) dried goji berries
25 g (1/4 cup) craisins
25 g (1/4 cup) dried longan pulp
25 g (1/4 cup) raisins
25 g (1/4 cup) pumpkin seeds
25 g (1/4 cup) pecans
Whole roasted chestnuts

Additional Ingredients:
Extra toppings for decor
Coconut oil
