🍝 High Protein Creamy Tuscan Chicken Tortellini
Recipe (4 servings):
🛒 Ingredients
🍗 20oz chicken breast, cubed
🧀 20oz cheese tortellini
🍅 2.66oz sun-dried tomatoes
🥛 1 cup milk
🧀 1/2 cup parmesan, grated
🍲 2 cups chicken broth
🧈 1 tbsp butter
🧄 1 tbsp garlic, minced
🥬 1 bundle baby spinach
🌿 2 tsp Italian seasoning
🌶️ 2 tsp paprika
🧅 2 tsp onion powder
🧄 2 tsp garlic powder
🧂 Salt + black pepper to taste
🌱 Fresh parsley to finish

👨🍳 Method
1. Season cubed chicken with salt, pepper, onion powder, garlic powder, paprika, and Italian seasoning.
2. Melt butter in a large pan, add minced garlic and sun-dried tomatoes, cook 1 minute until fragrant.
3. Sear chicken in the same pan until golden on all sides, then remove and set aside.
4. Pour in chicken broth and milk, scrape the pan bottom, then bring to a gentle simmer.
5. Add tortellini and cook for 7-8 minutes until tender, stirring occasionally.
6. Stir in parmesan until melted and the sauce thickens, then return chicken to the pan.
7. Fold in spinach until just wilted, finish with fresh parsley and serve hot.
