Beef Wellington Appetizers - On the Blackstone Griddle!

This is Nate's Knock-Off Beef Wellington. It's an easy way to make expensive steak like filet mignon go further and give a larger group a little taste. They are also really fun to make and very tasty!
A couple of tips we will share,,,,
1- Make sure the water your dipping the rice paper in is very warm. This seems to make a big difference in how pliable the wrap is. Warner water makes it easier to wrap.

2- Make sure you salt and pepper the beef a second time after you pull them off the griddle for the first time. Beef loves salt and pepper and much of it ends up staying on the griddle. The second salting and peppering makes a huge difference! Thats about it.
