大家好 今天和您們分享"麵豉蒸排骨" 。新鮮排骨12兩大約450克, 麵豉1湯匙, 用這裡的一半左右, 另外要1片薑1粒蒜頭少許蔥白。酒樓做法 排骨會在流動的水下沖洗10分鐘, 家庭做法 在流動的水下面 洗多幾次, 務求把血水洗清, 也有人 把生粉/澱粉放進去 揉搓一會, 目的也是洗走血水, 洗淨的排骨 吸乾水, 看看是否大小均勻, 若是太大件, 改小一點, 加少許蒜蓉, 少許薑末, 這些蔥白 稍後再加入, 少許胡椒粉, 1湯匙麵豉, 1茶匙紹興酒, 半茶匙生抽, 1/4 茶匙老抽, 1茶匙糖, 拌久一點 大約1分鐘左右, 開澱粉水, 1湯匙澱粉, 加1湯匙水, 分幾次加入, 加入蔥白, 1湯匙油, 醃30分鐘左右, 盡量攤薄, 不要重疊, 吃辣的可放些辣椒。 水滾下鍋, 酒樓蒸8分鐘, 我大火蒸10分鐘, 您們因應自家的火力自行決定, 如果請客的話, 可灒入1湯匙滾油。
