BBQ Smoked Meatloaf

Today was a great day to fire up the Kamado Joe Classic 3 and cook a meatloaf. I have been working on a new and simplified meatloaf recipe that, in my humble opinion, is my best so far. The Farm Sauce is a star ingredient in this recipe. You can make your own version of this recipe using whatever BBQ sauce you like, but THIS one is definitely tops in my book. This is one of the most versatile sauces I have come across so far.

Here's the recipe:

1 1/2 pound 80/20 ground chuck
1 egg, beaten
1 medium yellow onion, finely diced
1/2 cup barbecue sauce
1/2 cup whole milk
1 cup bread crumbs
1 tablespoon of your favorite BBQ rub
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme

Top Glaze:

Extra barbecue sauce (sweetened with brown sugar if desired)

Preheat your grill to 350°F and setup for indirect cooking with a small amount of a light smoke wood such as cherry, apple, or pecan.

While the grill is preheating, combine all of your meatloaf ingredients and press it into a loaf pan. Cook for 50 to 70 minutes until your meat temperature reaches 160°F. After about 35-40 minutes of cooking, top with your additional barbecue sauce glaze if desired.
