楊州炒飯 Yangchow Fried Rice

材料: 香米1磅 ,大蝦8安士 ,叉燒6安士 ,青紅豆2安士 ,青蔥2條 ,雞蛋3只。

調味料: 油2湯匙,鹽1茶匙,雞精1茶匙,生抽1茶匙,胡椒粉少許。

烹制方法: 香米洗淨,用砂窩加入2杯水煮熟,大虾剝壳去腸洗淨,用少許鹽,胡椒粉少許,生粉1/2茶匙醃勻,叉燒切粒,青蒽切花,3只鸡蛋打勻置碗中。大鑊燒滾2杯水,將青紅豆飞水盛上炸籬。燒紅鑊落油2杯,然後將大虾走油,倒上炸籬,鑊中落油2湯匙,把雞蛋炒至8成熟,倒入白飯,叉燒粒,翻炒5分鐘,放入調味料,青紅豆,大虾,葱花,炒勻上碟。

Ingredients:
Jasmine rice (2 cups), Jumbo shrimp (8 oz), Char siu (Chinese bbq pork) 6 oz, peas and carrots (2 oz), spring onions (2 stalks), 3 eggs, vegetable oil, salt, granulated chicken soup base, light soy sauce, white pepper powder.

Directions:
Wash 2 cups Jasmine rice. Cook Jasmine rice. Peel and devein shrimp, then rinse clean. Add a little salt, white pepper powder, ½ tsp corn starch to shrimp and mix well. Dice the char siu. Cut spring onions. Beat the 3 eggs.
Boil water in wok, then add the peas and carrots to cook. Remove the peas and carrots. Heat wok and add 2 cups vegetable oil. Fry the shrimp. Remove shrimp and oil from wok. Add 2 tbsp vegetable oil to wok and fry the eggs till almost cooked. Add the Jasmine rice and mix well with eggs. Add char siu and shrimps and stir fry well. Add the peas and carrots. Add 1 tsp chicken soup base. Add 1 tsp salt. Stir fry and mix well. Add some white pepper powder. Add 1 tsp light soy sauce. Add spring onions.
