Quick Cherry Cake with Two Creams
Ingredients
For the base:
• 350 g biscuits (any kind you like), finely chopped or blended
• 100 g melted butter
For the cream layers:
• Mascarpone or cream cheese – divided evenly between two bowls
• Whipping cream – same amount as mascarpone/cream cheese (1:1 ratio)
• Nutella, chocolate spread, or melted chocolate (milk/dark mix optional)
• Sugar (to taste)
• Vanilla extract or vanilla sugar
• Cherry jam
• Fresh or preserved cherries (for decoration)
Instructions
1. Prepare the base
• Mix the crushed biscuits with the melted butter until well combined.
• Press the mixture firmly into the bottom and slightly up the sides of a cake pan or pie dish.
• Bake in the center of a preheated oven at 180°C (no fan) for 8 minutes.
• Let the crust cool completely. This step helps it become compact and firm.
2. Prepare the cream layers
• In two separate bowls, add equal amounts of mascarpone or cream cheese.
• Chocolate cream: To the first bowl, add several spoonfuls of Nutella, chocolate spread, or melted chocolate (use a mix of milk and dark chocolate if you prefer it less sweet). Mix with a hand mixer until smooth and well combined. Adjust sweetness to taste.
• Vanilla cream: In the second bowl, add a few spoonfuls of sugar and a splash of vanilla extract or a packet of vanilla sugar. Beat with a mixer until smooth. Again, adjust sweetness to your liking.
• Whip the cream to stiff peaks. Divide it evenly between the two bowls and gently fold it into each cream mixture until fully incorporated and smooth.
3. Assemble the cake
• Spread the chocolate cream evenly over the cooled biscuit base.
• Add the vanilla cream on top, smoothing it out with a spatula.
• Spoon small patches of cherry jam over the top layer and gently swirl for a marbled effect, if desired.
• Decorate with fresh or preserved cherries.
4. Chill
Refrigerate the cake for at least 4 hours, ideally overnight, to allow it to set and for the flavors to develop.
