Hey friends and welcome!🌞 In this weeks what I eat in a week I wanted to share some very simple, realistic and vegan meals that you can easily make when you don't have a lot of time but you still want to nourish your body with delicious and fresh food! Many of these recipes can be thrown together in under 20 minutes !

What I use to film : Sony ZV1
What I use to edit: iMovie ( on my Macbook )
Brownie recipe:
1/2 can chickpeas ( unsalted )
5 tbsp tahini
1/2 cup maple syrup
1 tsp baking powder
1/2 tsp salt
3 tbsp milk of your choice
1/3 cup cocoa powder
1 cup oat flour
lots of chocolate chips ( you don't need to melt chocolate and put it into the brownie like I did, it didn't really do much lol )
Preheat oven to 350F
combine everything in a food processor until smooth. Place batter into an oiled 9x6" baking pan. bake for 23-26 minutes
Smoothie:
1 browned banana ( or frozen banana )
1 cup cool coffee
1 scoop chocolate protein powder
small handful walnuts
small handful cashews
2 tbsp cocoa powder
1 tsp lions mane mushroom powder
2-3 tbsp hemp seed
3 dates
1 heaping tbsp peanut butter
ice!
Granola Recipe:
3 cups oats
1/2 cup dried cranberries
1/4 cup pumpkin seed
1/2 cup crushed walnuts
1/4 cup white sesame seed
1/4 cup black sesame seed
1/4 cup almond slices / pieces
good pinch of salt
1 tsp cinnamon
6 tbsp tahini
1/2 cup maple syrup
preheat oven to 325F
combine well and oil a baking sheet really well with coconut oil
Press mixture with your spatula into the pan until it forms a 1/2 " thick slab of lightly packed granola
Bake for 20-25 minutes
Once done, allow to fully cool before disturbing
