BEST EVER BELYASHI 🔥 Crispy Outside, Juicy Inside #cooking #recipe
These homemade belyashi are crispy outside and incredibly juicy inside.
Soft dough, flavorful meat filling, and golden crust — perfect comfort food.

Ingredients
Dough
• 2 ¼ tsp active dry yeast
• 1 cup warm milk (or water)
• 1 tbsp sugar
• 1 tsp salt
• 1 egg
• 2 tbsp oil
• 3–3½ cups flour
Filling
• 1 lb (450 g) ground beef (or beef + lamb)
• 1 small onion (very finely chopped)
• ½ tsp salt
• ½ tsp black pepper
• 2–3 tbsp cold water (for juicy filling)
For frying
• Oil (about 1–1.5 cups)
Instructions
1. Make the dough
1. Mix warm milk + sugar + yeast.
2. Let sit 5–10 min until foamy.
3. Add egg, salt, oil.
4. Add flour gradually.
5. Knead soft dough (not sticky).
6. Cover and let rise 1 hour.
2. Make filling
Mix:
• ground meat
• onion
• salt
• pepper
• cold water
Do NOT cook filling — it goes raw inside.
3. Shape belyashi
1. Divide dough into balls
2. Flatten each into circle
3. Add 1 tbsp filling
4. Pinch edges, leave small hole in center
5. Flatten slightly
4. Fry
1. Heat oil medium-low (important)
2. Place hole side DOWN first
3. Fry 4–5 minutes
4. Flip and fry 3–4 minutes
5. Drain on paper towel
Tips for PERFECT BELYASHI
• Oil not too hot (or raw inside)
• Add water to filling = juicy
• Fry hole side first
• Use medium heat only
