​In this video, we prepare the dough using only flour, yeast, salt, a touch of oil, and water—kneaded to perfection and rested for 2 hours. The secret lies in the filling: fresh, wild mountain herbs (like scallions or wild leeks) chopped finely and folded into the thin dough. Cooked over a crackling wood fire on a traditional cast-iron Saj, the smell of smoke and herbs is truly intoxicating. Finally, we brush it with local oil and serve it with fresh sheep's milk yogurt.
