Ingredients

Beef

• 8 oz high-quality beef tenderloin or sirloin
• Salt and black pepper

Tartare Mix

• 1 shallot, finely minced
• 1 tbsp capers, chopped
• 1 tbsp cornichons or pickles, finely diced
• 1 tsp Dijon mustard
• 1 tsp Worcestershire sauce
• 1 tsp olive oil

Finish

• 2 egg yolks
• Chives
• Toasted bread or fries



Steps

1. Chill the beef

Place beef in freezer for 10–15 minutes to firm slightly for easier cutting.



2. Hand chop

Using a sharp knife, finely dice beef into very small pieces.

Avoid grinding — hand chopping keeps better texture.



3. Build the tartare

In a bowl combine beef with:

Shallots
Capers
Cornichons
Dijon
Worcestershire
Olive oil

Season lightly with salt and pepper.

Mix gently.



4. Plate

Use a ring mold or spoon to shape the tartare neatly onto a plate.



5. Finish

Place egg yolk on top.

Garnish with chives and extra pepper.

Serve with toasted bread or fries.
