My Wife Loves This Food | Quick , Easy Chicken and Rice Stew

Arroz Aguado is a Nicaraguan chicken and rice stew. It is a traditional
Nicaraguan chicken soup with bone in chicken. This one-pot meal is cheap, easy to make and more nurturing than your average can of chicken noodle soup. So get your ingredients and lets get cooking!!!!

Ingredients:

6 Cups of water
1 Whole chicken cut in 8 pieces
Salt to taste
2 Tablespoons of ground annato or annato paste( can substitute with paprika for color)
1 Tablespoon of garlic paste or 2 finely chopped cloves
1 Onion diced
1 Sweet pepper diced
2 tomatoes diced
2 Tablespoons of chicken bouillon
1 Orange
1 Lime
2 Cups of washed rice
1 Bunch of mint
If you can get your hands on some sour oranges those will be great. The original recipe calls for sour oranges
but they don't sell them where I live. That way you eliminate the orange and lime.

Ingredientes:

6 Tazas de agua
1 Pollo entero cortado en 8 pedazos
Sal al gusto
2 Cucharadas de Achiote molido o en pasta( Puede substituir con paprika quen le de color)
1 Cucharada de pasta de ajo o 2 ajos picados
1 Cebolla picada en cuadritos
1 Pimenton dulce picado en cuadritos
2 Tomates picados en cuadritos
2 Cucharadas de consome de pollo
1 Naranja
1 Limon
2 Tazas de Arroz lavado
1 Moño de menta
Si pueden conseguir naranjas agrias mucho mejor. Ya que la receta original es con naranja agria, donde vivo no las venden. Asi se eliminan la naranja y el limon.
