RELAXING ITALIAN RISOTTO IN A COZY COUNTRY KITCHEN IN TUSCANY, ITALY

It's such cosy winter weather here in Italy so I thought I'd share my favourite risotto recipe. Sometimes I make it as shown here with dried porcini mushrooms, other times with asparagus as at the end of the video, however, I've also often made a simple risotto Milanese with saffron and butter and little more. I prepared this dish in a beautiful rustic villa in Tuscany, Italy. I love slow cooking by a fireplace, with some classical or jazz music and all the aroma of white wine, butter, onions and pancetta. If you wanted to make this vegetarian or vegan, risotto is very versatile. The important thing is to use Arborio rice that results in that lovely creamy texture. I made this video bilingual in English and Italian for those of you learning Italian. Don't worry if you can't understand it all - it's super important when studying Italian to sometimes just let the sound of it wash over you so you become familiar with the cadence.
