Nanaimo Bars

These are a tasty treat from Canada - it is a no-bake triple layer fridge cake - also known as ‘London Fog Bars’ or ‘Smog Cakes’
 
INGREDIENTS
80g blanched almonds
100g desiccated coconut
200g digestive biscuits
30g cacoa powder
50g caster sugar
1 egg
220g butter (softened)
200g icing sugar
2 tbsp custard powder
2 tbsp milk
120g milk chocolate
 
Toast the almonds in a pan for 5 minutes. Separately toast the coconut for 5 minutes. Add the almonds and coconut to a food processor and blend. Add the biscuits, cacoa powder, sugar, egg,100g butter and a pinch of salt – blend again. Pour out into an oven tray lined with parchment paper and push down to create a firm, flat layer. Chill in the fridge for 30 minutes.
 
Beat 80g butter with the icing sugar, custard powder and milk. Pour this over the biscuit layer and chill in the fridge for 1 hour
 
Melt the chocolate in a Bain Marie and then stir in the remaining 40g butter. Leave to cool for 10 minutes then spread over the custard layer. Chill in the fridge for 30 minutes. Cut into squares and store in the fridge.
