In this episode of Pheebz to Table, Phoebe discovers how to make tofu at Yusuikoubou, a small-batch tofu shop that supplies restaurants in the Mt. Oyama area.
Aihara Takuya first started making tofu from scratch to provide the highest-quality ingredient to his family’s 400-year-old traditional inn and restaurant across the road from his shop. He reveals the step-by-step process of how to make tofu, from grinding the soybeans to cutting and packaging the final product. After being put to work at the tofu shop, Phoebe sits down for a meal at Tougakubou, the inn and tofu kaiseki restaurant that Aihara-san’s family runs, for a feast that features tofu and okara in numerous applications.
How to Make Tofu
1-Soak soybeans overnight
2-Grind soybeans
3-Boil soybean mixture
4-Separate mixture into soy pulp (okara) and tonyu (soy milk)
5-Add coagulant to the soy milk
6-Pour into molds and allow to set
7-Cut tofu into squares
8-Store tofu submerged in water
