The capacitance of parallel plate capacitors is based solely on the physical properties of the capacitor. Specifically capacitance is determined by the overlapping plate area, the distance between plates and the permittivity of the insulator between the plates. This video shows where this equation comes from (spoiler: it's due to electric charge).
