Easy Blueberry Muffin Recipe with Bonnie Mulyk | Waitrose

Makes 12 muffins
275g plain flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp bicarbonate of soda
1/4 tsp cinnamon
150g caster sugar
50g light brown sugar
2 large eggs
150g Greek yoghurt
125g butter, melted
1 large lemon, zested
1 tsp vanilla extract
100ml milk
360g blueberries

Cinnamon sugar
75g Demerara sugar
1 tsp cinnamon
1 tsp lemon zest
Whipped Brown Butter
250g salted butter

- Line a muffin tin with muffin cases and preheat the oven to 160c fan / 180c static.
- Combine the dry ingredients in a medium sized mixing bowl.
- Rub the lemon zest into the sugars in a large mixing bowl. Add the eggs, yoghurt, melted butter and vanilla. Whisk until smooth.
- Add the dry ingredients and whisk until just combined. Don't overdo it. Add the milk to thin out the mixture. Add most of the blueberries, reserving a handful for the top.
- Combine the ingredients for the crispy sugar topping.
- Spoon the muffin mixture into the lined muffin tin. Top with the reserved blueberries and sprinkle the cinnamon sugar on top.
- Bake for 25 minutes.
- Melt the salted butter for the browned butter until frothy, brown and nutty. Whisk the butter over an ice bath until thick and creamy.
- Serve the warm muffins and enjoy
