Homemade White Pan Gravy Recipe Noreen's Kitchen

Greetings! To go along with my fried pork cutlets and garlic mashed potatoes, Rick also requested that I make up some of my white pan gravy. I have had a number of people ask me what white gravy is and if you are from the south or the southwest, you already know that white gravy, white pan gravy or cream gravy is the elixir of the Gods! A simple but delicious gravy that is put on top of everything from biscuits to chicken fried steak to mashed potatoes to anything you can think of.

White gravy is nothing more than a very simple way of saying "Bechamel Sauce" it was a staple of the chuck cook on cattle drives of yore, and still is today. There is nary a cowboy that does not know this wonderful gravy. It is delicious on biscuits plain or with sausage, put on top of hash browns, mashed potatoes or even toast. It is the perfect accompaniment to fried chicken fillets, fried steak and in this case, fried pork cutlets.

The gravy is made using a simple roux either from the oil you have fried your meat in or bacon fat or butter or plain oil and flour. Adding in milk and cream to round things out and cooking until it thickens then adding your seasonings of salt and lots of pepper. If you have used bacon drippings then you want to taste it for the salt because the bacon will have seasoned things up nicely.

This is a great recipe to have in your repetoire for when you want the ultimate comfort food meal, which includes something fried and something mashed, slathered with this gravy. You are really going to enjoy this if you have never had it before.
