GLUTEN FREE FLATBREAD | Creamy Roasted Garlic + DIY Gluten Free All Purpose Flour

Flatbread is such a lovely and satisfying addition to so many meals! This recipe is gluten free, yeast free, super simple and perfect for those of us with sensitive bellies :) I love serving these flatbreads with curries, soups, or just eat as a snack with hummus or one of my favorites - roasted garlic and herbed olive oil, which I’m showing you how to make today as well.

For this recipe I’m using grass fed organic yogurt but I have tried it with coconut yogurt as well. It works well but it starts to give off a little bit of dessert vibes rather than tasting like a traditional bread. I’ve tried so many different variations but the one I’m sharing with you today is my favorite by far.

GLUTEN FREE ALL PURPOSE FLOUR BLEND:

2 cups superfine brown rice flour
½ cup white rice flour
½ cup of potato starch
½ cup tapioca flour

FLATBREAD RECIPE:

1 egg at room temperature, lightly beaten
1 cup of yogurt (I use organic grass fed yogurt)
¼ cup of extra virgin olive oil
2.5 cups of our gluten free flour blend
2 tsp of baking powder
1.5 tsp of xanthan gum
Generous pinch of salt

CREAMY ROASTED GARLIC SPREAD:

4-5 heads of garlic
Salt & pepper to taste
Olive oil
Bake at 400°F (200°C) for 45min-1hr
