How to Make the Perfect Chicken Quesadilla

Crisp on the outside with a melty-cheesy inside... Adding sautéed veggies and chicken to these quesadillas make them super filling and delicious!

These chicken quesadillas are always a hit with my family and friends and I truly think the secret to them is the sauce. Spicy mayo isn't the usual sauce you see inside quesadillas but I promise once you try these, you'll make them over and over again!

◾️~2 lbs chicken breasts seasoned with 1 tsp garlic powder, 1 tsp salt, ½ tsp pepper
◾️2 tbsp olive oil, divided
◾️1 red bell pepper
◾️1 green bell pepper
◾️1 hatch pepper, optional
◾️1 large red onion
◾️season veggies with 1 tbsp garlic powder, ½ tsp salt, ½ tsp pepper
◾️3 cups shredded cheese
Sauce:
◾️3/4 cup real mayo
◾️2 tbsp hot sauce
◾️1 tsp cumin
