Kabuli Pulao is a delicious dish from northern Afghanistan which consists of lamb meat, raisins, carrots, and rice. It is one of the popular dishes in Pakistan and claimed to be the national dish of Afghanistan as it is named after the nation’s capital, Kabul. Kabuli Pulao recipe is prepared by cooking long grained basmati rice in a broth which gives it its beautiful brown texture. Although traditional Kabuli pulao is prepared by lamb, chicken and can also be used for the preparation. The meat is usually covered or buried under the rice. Unlike most rice-based recipes, this aromatic Afghan cuisine is baked in an oven and is topped with nicely fried carrots which are sliced into thin pieces, raisins, fine cut orange peel strips and chopped nuts and dry fruits like cashews, walnuts, and almonds.
