Bacon Grilled Cheese | Chef Eric Recipe

Take your standard grilled cheese to the next level by cooking it on the grill!

Bacon Grilled Cheese

Ingredients:
4 Slices Bacon, Cheshire Pork
2 Tablespoons Butter, Unsalted
4 Slices Sour Dough Bread
1 Cup Shredded Mozzarella
1 Cup Mexican 4 blend Cheese
2 teaspoons Lanes BBQ SPG (Salt, Pepper, Garlic)

Method:
1. Stabilize your grill at 400F. Install a cast iron griddle over the open flame and place a half moon deflector shield on the other half and top with a grill grate, creating 2 zone cooking.
2. Before the cast iron griddle gets hot, place the bacon on the surface and allow the bacon to cook utilizing the gradual rising heat as the grill comes to temperature. Wipe some of the grease off the surface then add a knob of butter to the remaining grease. Place the sour dough on the cast iron griddle top in the melted butter. Allow the bread to toast for 2 to 3 minutes then melt a bit more butter and flip.
3. As soon as you flip the bread top each slice with ½ cup of mixed cheese and season the shredded cheese with SPG. Place 2 slices of bacon on top 2 slices of bread. These will be your bottom halves. Close the dome and allow the cheese to melt.
4. Transfer the toasted bread with melted cheese to the indirect side and allow the cheese to melt a bit more, then top the sandwiches and transfer to a cutting board. Slightly press the sandwich and slice in half. Plate and enjoy!
