Spicy mezcal margarita ice lollies with chilli and Tajín sugar RECIPE ⬇️

Ingredients: 
400ml simple syrup, chilled
100ml mezcal 
4 tbsp lime juice 
4 tbsp triple sec 
3 tablespoons honey 
1-2 dashes tabasco 
3 jalapeños, finely sliced 

Chilli and Tajín sugar: 
100g caster sugar 
½ teaspoon citric acid 
1 teaspoon chilli flakes 
1 teaspoon smoked paprika 
1 teaspoon Tajín 

Method: 
🌶️In a jug mix together the cooled syrup, mezcal, lime juice, triple sec, honey and jalapeños 
🌶️Pour the margarita mixture into the ice lolly moulds, making sure to disperse the sliced jalapeños throughout the moulds 
🌶️Cover the top of the ice cream moulds with foil, or a pre-bought lid if they came with the moulds, then insert a lolly stick into each of the lollies 
🌶️Transfer to a freezer and chill for around 4 hours
🌶️Around 10 minutes before serving, mix together all the chilli and Tajín sugar ingredients in a small bowl. Taste and adjust with extra Tajín or chilli flakes as desired
🌶️Remove the frozen lollies from the moulds and dust the tips of the ice lollies in the spiced sugar mix
