It's about time I included an English beer style in the simple brewing series - English beers are not difficult to make, and are some of the most satisfying and balanced beers out there. The Bitter that I brewed in this video had excellent English hop character and satisfying, chewy toffee-like maltiness that was delicious. 5.4% ABV 28 IBU
9 lb Simpsons Maris Otter (85.7%)
0.5 lb Dingemans Biscuit Malt (4.8%)
0.5 lb Briess Caramel 60 (4.8%)
0.5 lb Briess Caramel 120 (4.8%)
Mash: 154 F (68 C) for 60 min
Water (ppm): Ca 85, Mg 13, Na 26, Cl 136, SO4 125, HCO3 0
Add to 8 gal (30 L) RO water: 6g CaCl2, 2g NaCl, 4g Epsom (MgSO4), 4g Gypsum (CaSO4)
60 min boil:
60 min - 1 oz (28g) Northdown (6.4%% AA) (22 IBU)
15 min - 1 oz (28g) Fuggles (4.1% AA) (6 IBU)
OG: 1.054
Yeast: Lallemand Verdant IPA (dry)
Pitch and ferment at 65 F (18 C) for 10-14 days. Once completed, condition for a few days to a week then package. Carbonate to a low level before serving.
