So, with that… here is a Green, Purple, and Gold recipe to help you celebrate the season.

Mardi Gras Potato Salad ingredients:
⁃ 1lbs of Dutch Yellow Potatoes
⁃ 1lbs of Dutch Blue Potatoes
⁃ 1/4 cup olive oil
⁃ 3 tbsp balsamic vinegar
⁃ 1 clove garlic
⁃ 1 tbsp Dijon mustard
⁃ Salt and pepper
⁃ 1/4 cup parsley
⁃ 1/4 cup Kalamata olives
⁃ 1.5 cups green beans
