Hummingbird Cake Recipe | Banana-Pineapple Spice Cake | Jamaican Doctor Bird Cake

You will forget your basic Banana Cake, once you get a taste of the Hummingbird Cake.

Originated in Jamaica where the cake is called Doctor Bird Cake, and popularised in the Southern United Stated with a new name as "Hummingbird Cake" in the late 1970s.

This cake has got it all, the soft banana and pineapple sponge with a hint of spice, the tasty creamcheese frosting and crunchy pecans.

INGREDIENTS:

FOR THE SPONGE

* 330g All-purpose Flour
* 10g Baking Powder
* 6g Bicarbonate of Soda
* 1/2 tsp Salt
* 1 1/2 tsp Ground Cinnamon
* 1/4 tsp Ground Nutmeg
* 4 Large Eggs
* 70g Caster Sugar
* 150g Light Brown Sugar
* 230ml Vegetable Oil
* 1 tsp Vanilla Extract
* 250g Mashed Overripe Bananas
* 230g Tinned Crushed Pineapple
* 100g Pecans, roughly Chopped

FOR THE FROSTING

* 170g Cream Cheese
* 90g Icing Sugar
* 490g Heavy Cream
* 1 tsp Vanilla Extract
* Lime Zest of 1 Lime

FOR THE TOPPING

* Pecans, roughly Chopped

I used two 8 inches (21cm) round baking pans.
