Making my mom's homemade dumplings *a chaotic cooking lesson*

I grew up eating the *most delicious* home cooked meals that have definitely set my palate bar very high. I want to share those dishes with you and document my mom's recipes so that I can look back on these myself 😊💗

Mama Lee doesn't use any measurements, she just 'goes by feel' and cooks intuitively. These may not be the most precise instructions, but ultimately how much of each ingredient you put in really depends on what you flavours you like most – so experiment and have fun!

🥟 *Dumpling Filling Ingredients*
- Sichuan pepper flavoured oil
- Pork
- Baby Chinese Mustard greens / nappa cabbage / chives / whatever veggie your heart desires
- Mushrooms
- Ginger
- Shaoxing cooking wine
- Oyster sauce
- Soy sauce (use different kinds for more depth e.g. light, dark)
- Sweet cooking rice seasoning

*Dumpling Sauce*
1. Chop up A LOT of garlic
2. Pour hot oil over the garlic.
3. Add soy sauce and dark vinegar into the hot oil and garlic.
4. Add in chilli sauce to taste.
